Zest and juice from I orange
480 g (lib) strawberries
Orange liqueur (to taste)
45 g (1 ½ oz) icing sugar
300 ml (10 fI.oz) double cream
2 tbsp brandy

- Peel the zest of the orange very thinly and shred with a sharp knife. Squeeze the juice out.
- Place the strawberries in a large bowl, retaining four for garnish. Pour the orange juice and half the zest over the strawberries and add the orange liqueur; to taste.
- Scatter with half of the icing sugar and mix. Cover with cling film and chill for one hour.
- Whip the cream in a separate bowl until nearly stiff, mix in the remaining sugar and the brandy and finish beating.
- Take four sundae glasses and half fill with the strawberries, top with the brandy cream, and decorate with the remaining strawberries and orange shreds.
