Baked Blueberry Cheesecake Recipe - What you will need to make baked blueberry cheesecake:
  • 150 g (5 oz) crushed digestive biscuits 
  • 60 g (2 oz) butter (melted) 
  • 170 g (6 oz) cottage cheese 
  • 150 g (5 oz) natural yogurt 
  • I tsp plain flour 
  • 15 g ('/2 oz) caster sugar 
  • I egg, plus I egg white 
  • juice and grated zest of half a lemon 
  • 200 g (7 oz) blueberries 
  • mint leaves

How To Make Baked Blueberry Cheesecake

  1. Grease and line a 20 cm (8 in.) tin. Mix the digestive biscuits and melted butter together and spoon into the tin. Chill until firm. . 
  2. Place the cottage cheese in a food processor and process until smooth, 
  3. Mix in the yogurt, flour, sugar, egg and egg white, Stir gently, then mix in the lemon zest and juice, Lastly fold in the blueberries, saving a few for decoration, 
  4. Pour the mixture onto the biscuit base and bake in a preheated oven at 180°C / 355°F / gas mark 4 for 30- 35 minutes or until just set. Turn off the oven and leave for another 30 minutes,
  5. Run a knife around the cheesecake and carefully turn out onto a serving plate, Decorate with the remaining blueberries and mint leaves to finish,
