For the filling: 
480 g (lib) pink rhubarb 
180 g (6 oz) caster sugar 

For the crumble: 
120 g (4 oz) plain flour 
60 g (2 oz) butter 
60 g (2 oz) caster sugar

To make the filling: 
Crease an oven-proof pie dish. Trim and wash the rhubarb, cut into 21/2 cm (I in.) pieces and place in the bottom of the dish. Dredge with some of the sugar. 

To make the crumble: 
Sift the flour and 30 g (I oz) of the sugar in a large bowl. Gently rub in the butter to form very coarse crumbs, taking care not to compact the mixture. 
Scatter this mixture evenly over the rhubarb and sprinkle the remaining caster sugar over the top. Bake in an oven preheated to 195°C / 380°F / gas mark 5 for approximately 30-40 minutes, or until the crumble is golden and crisp.
